The 'World Pastry Cup' is held bi-annually and brings together the best pastry chefs from around the world for a contest of sweet creations. The 2009 event was held in Lyon, France as part of the Sirha trade exhibition. The teams are comprised of a pastry chef, a chocolate maker and an ice specialist, who have 10 hours in which to prepare 14 desserts, along with sculptures made of ice, chocolate and sugar. Pastry Chef Steven Jiang of the JW Marriott Nanjing Road luxury hotel (http://www.marriott.com/hotels/travel/shajw-jw-marriott-hotel-shanghai-at-tomorrow-square/), as team captain, lead the team of three creative Chinese pastry chefs as they spent eight long months of preparation before they finally made the journey to Lyon, France.

To get to this level in the first place, pastry chefs from all over China had to compete in the first round of competition organized by FHC (Food Hotel China) which the Chinese team won. Then in April 2008, they went on to represent China in the second stage of the selection process which was held in Singapore competing with teams from all over SE Asia. Finally their efforts paid off and they qualified to represent China in the 2009 'World Pastry Cup' in France.

In the lead up to prepare for the Cup, the team of three pastry chefs spent eight months trying out new dessert recipes and creating ice sculptures before they decided upon their final creation which they called 'China Legend' which is comprised of a chocolate phoenix sculpture, a sugar creation in the shape of a fish and a dragon ice carving, all symbols of Chinese culture. A highlight was a beautiful cake that had a colourful sugar shell in the colours of the sea that rested on top of the cake. Their unique creations were designed to reflect Chinese culture and art.

Steven Jiang joined the JW Marriott Nanjing Road luxury Hotel in Shanghai (http://www.marriott.com/hotels/travel/shajw-jw-marriott-hotel-shanghai-at-tomorrow-square/) back in 2007 and since that time his creativity and leadership has guided the hotel's pastry team to constantly excel, providing hotel guests with imaginative and tempting desserts, pastries and chocolates.
